Original source: several years ago, I caught this recipe on an episode of Easy Entertaining with Michael Chiarello

The recipe: Fennel-Spiced Prawns with Citrus Salad

This combination is incredibly good—fragrant and warm pan-grilled shrimp top a simple citrus-juice-and-olive-oil dressing over peppery watercress. Very summery, and so very good. I actually prefer using smaller shrimp so I can get more spice rub surface area. (Side note to self: the shrimp might be even better when grilled.)

You do have to like fennel, but if you’re married to a fennel-fiend like I am, the Fennel Spice Rub called for in this recipe is a very worthwhile pantry staple. So today I made up another batch to keep on hand. Husband + self have confirmed that it’s really delicious on fish…we’ve yet to try it on meat and vegetables as Chiarello recommends.
